Kale!!!!

Seriously though. Kale!! I love kale. I am actually cooking some right now to have as an after dinner snack. Crazy vegans and their weird desserts!
This week, I bought a ridiculous amount of kale and have done three things with it. Well, three things with it.
1) Kale and white bean soup with potatoes. Yum! I didn't use any sort of recipe or measure anything out. I am sure you could find a recipe easy peasy.
2) Raw kale salad with carrots, quinoa, and cashew tamari dressing. You could do any cashew Caesar type dressing with this. I am oddly, not a huge fan of carrots, but I love them paired with raw kale.
1 bunch of kale, rinsed and chopped
2 carrots, peeled and coined
1 cup of quinoa
1/3 cup of cashew dressing
Toss it all together. Serves three.
3) Kale. Just kale. Made the way a proper southern lady makes it.
4 bunches of kale, soaked in a sink filled with cold water, de-stemmed*, and chopped
4 cups of vegetable broth
5 cloves of garlic, 2 minced 3 sliced
1 tsp liquid smoke
1 tsp chili oil (or red pepper flakes if you don't have the oil)
at least 2 TB of earth balance (I like whipped). Let's be clear, feel free to use more
salt/pepper to taste
Fill a pot with everything but the kale. This is called you hot stock. Turn it up to medium and throw in the kale. Put the lid on and let it come to a boil. Once the lid is shaking, turn it down and let it go for a long long time. Like 40-60 minutes until the kale is velvety smooth.
Now, you could serve it right away, but it is actually better if you refrigerate it over night in the hot stock and serve it the next day.
* and yes. you do need to de-stem them. The stems will never get as soft as the leaves, and it throws off the balance of textures.

I love Kale too, when I first put in my garden I grew, like, 5 different kinds. I had so much I didn't know what to do with it!
