Vegan MOFO- Day 3

Dis somebody say Donuts?!!!!!

Henry did last night. He said he would only go to bed if I promised to make him donuts the next day. I had to oblige! I heart donuts. Sadly, I hadn't made any since I stopped eating wheat. I am an expert donut maker. Really, I am. I even seriously thought about opening a donut food cart at one point.

Since I wanted to have everything ready in the morning for Henry, I just used a Bob's Red Mill gluten free bread mix that I had in the pantry for the dough. I made the dough in the bread maker. I truly find it to be better at getting the dough together than human hands. Once the dough was mixed and risen, I put it in a zip bag and into the fridge.

When I was ready to make the donuts I got the oil heating up, made a quick ganache, some lemon filling (also quick- just lemon juice, sugar, and a dash of arrowroot), and a powdered sugar glaze. I rolloed out the dough (about half of what I made the night before) and cut it into 6 rounds with a glass.

Three of the rounds got holes in the middle and were fried first. Those got the ganache on top. The other three were left hole-less and were fried a little longer. Those got filled with the lemon filling and dipped in the glaze.

The rest of the dough was turned into zeppolis. Zepplois are traditionally fried pizza dough balls. Once fried, they are thrown in little paper sacks with powdered sugar, or cinnamon sugar. I did both!


All in all, it was pretty good. Not as good as my wheat-y recipe. I will definitely do some tweaking next times, but definitely good enough for this guy:

I nominate you for BEST MOM EVER.

Seriously, those look amazing. I have got to get over my donut fear and make some. But if I do, it may be all I eat for the rest of my life.

wow! i wish my mom had made me from-scratch donuts for breakfast as a child. these look so amazing!

man, i love fried food so hard. i am not to be trusted around a pile of donuts...
