So.... I totally failed at blogging the first two days of Vegan MOFO. But Hey! Guess what?! It is VEGAN MOFO!!!For those of you who don't know, that means Vegan Month of Food. I will be blogging every day about vegan food. I promise. I know I let you down the past few days. I was at a wedding out of town. Speaking of weddings, let's talk about vegan food at non-vegan weddings!
I am probably in the minority here, but I do not expect anyone to cater to me. Being a vegan that doesn't eat wheat, I am pretty complicated. People's weddings are about them, not about me, so I always plan ahead and eat before or bring food. That leads me to being pleasantly surprised when there is something I can eat. And sometimes leads me to chipoltle smells in my purse (cough cough this weekend cough cough).
My friend's wedding this weekend was super fun. She also arranged for food for me and her other vegan friends. Notice I said, "other vegan friends". I am not the only one! Viva le Revolution! We had fruit, soft spring rolls, a super yummy fall salad with apples and almonds, and pasta with red sauce (no pasta for me, because of the wheat but I was already full anyways). Pasta with red sauce is a go to for most places (a vegan cliche, if you will), but this was a really lovely menu.
The worst thing I have ever had at a wedding (besides nothing) frozen mixed vegetables still kind of frozen over plain pasta. The thought was very nice, but I wish they had thought of something else. :)
I have two faves. One person had a buffet that has a bunch of grilled vegetables and ciabatta (that was before no wheat). I made a slammin' sandwich. My other fave was my BFF Andria's wedding. She made sure her vegans had vegan pad thai. Our friend Katie made delicious vegan cupcakes and an awesome pie for the groom that I totally stole a bite of. Who wouldn't steal a bite of that?
