This lady is giving up wheat. So sad! I feel like it is a punch in the gut, being a wheat free vegan, but when I eat wheat I feel like I have been punched in the gut. This isn't really new news. I have always had a craptastic digestive system. For those of you who were with me when I was pregnant with Zelda, you know I couldn't eat wheat at all for most of it. I was never supposed to go back to eating it, but I couldn't help myself. It is too wonderful.
But I am ready now. Ready to be the most inconvenient dinner guest. Ever.
Being wheat free in Austin is pretty easy. It would for sure be harder if I had celiac's or something, but since it is just an intolerance, I have lots of restaurant options. Lots of stuff in the stores too.
Example #1: Crunchmaster Multi-Grain Crackers from Costco (see above). Delicious! What better than the Mary's Gone Crackers crazy GF crackers.
Example #2: King Arthur (my faaaaaavorite flour company) Gluten Free Bread Mix. I got some on sale from Whole Foods. It is fantastic! There aren't a ton of vegan GF breads out there. The ones that are aren't very good.
Mike veganized this by using ener-g egg replacer for the eggs and earth balance whipped for the butter. Then he just threw everything in the bread maker. It is just like real bread. Great texture. I am really sensitive to the bitterness of a lot of GF products and this isn't bitter at all.
As a PS I emailed the company to make sure the mix was vegan and it is. The fatty acids listed in the ingredients are vegetable based. Score!

I've thought about slowly weaning us off wheat but I honestly have no idea what we'd feed Owen. He's super wheat dependent and extremely picky.
dude. the king arthur bread dough is a great replacement for regular bread and I bet it would make good pizza dough too.
and the other pastas are just as good as wheat.
it isn't as hard as i thought it would be. baking is the kicker.
